Toulouse, a European launchpad for the circular bioeconomy
Born out of a university research project in Auckland, Greenspot Technologies uses fermentation to transform agri-food industry by-products into nutritious and tasty powders. By choosing Toulouse as its base, the start-up has found the ideal environment to realise its vision: reinventing sustainable food on a large scale.
Technology born of science and common sense
At the origin of the project, Ninna Granucci and Silas Villas-Boas devised an innovative method for recycling food waste through fermentation. Supported since 2018 by Xavier Duportet and his Hello Tomorrow fund, the company set up in Toulouse to benefit from direct access to research, agricultural raw materials and European financing networks.
Why Toulouse?
Toulouse was chosen for several decisive reasons:
- The scientific and technological support of the TWB consortium, a key partner in the project.
- Access to a comprehensive ecosystem: CRITT Bio-Industries, INP-Purpan, Pôle Agri Sud-Ouest Innovation.

Support from Toulouse Team – Invest
The Toulouse Team – Invest played a decisive role on several levels:
- Structuring technological partnerships with TWB for the transition to industrial scale.
- Industrial networking (Nutrition & Santé, Lallemand) for the development of fermented products.
- Identifying local sources of supply through the Grand Marché MIN in Toulouse.
- Providing administrative and financial support (company creation, networking with Ad’Occ, Bpifrance, accounting firms).
- Personalised welcome and support for the founders and their families in settling in.
A fast-growing impact company
At the end of 2023, Greenspot Technologies launched its products and opened a demonstration plant in Carpentras (France 2030 programme ‘Ma Première Usine’ [My First Factory]).
This 1,600 m² facility will enable the production of 600 tonnes per year and the creation of 100 jobs. The company, which already employs around 20 people, aims to produce 86,000 tonnes of fermented products by 2030, avoiding 730,000 tonnes of CO₂ and 520,000 tonnes of waste.
